İngredients:
2 eggplants
1 egg
1 tea glass of grated cheddar cheese
1.5 tea glasses of flour
8--10 stalks of parsley
Salt, pepper
1 glass of breadcrumbs
Oil for frying
Directions:
Roast the eggplants on the stove or in the oven grill and let them cool.
Peel the cooled eggplants and cut them into pieces with a knife. Finely chop the parsley.
Put the cheddar cheese, flour, egg, parsley, salt and black pepper into the eggplants, mix well and let the mixture rest in the deep freezer for 1-2 hours.
Spread the breadcrumbs on a large plate and cut pieces of 3 fingers wide from the dough and cover it with breadcrumbs, giving the shape of meatballs in your palm.
Put the oil in the teflon pan and heat, fry the meatballs you prepared until they turn pink. Serve hot or warm.
