"Khachapuri" (photo-recipe)
Ingredients:
550 q flour
400 ml of 3.2% milk
60 g of butter
2 eggs
300 g of water
300 g of Imereti cheese
10 g of powdered sugar
5 g of dry yeast
10 q large salt

Preparation:
Melt the yeast in a little warm milk, add powdered sugar, 1 egg, a little flour (up to the consistency of sour cream) and mix, keep in a warm place for half an hour. Sift the rest of the flour until it rises, mix with coarse salt and 20 g of butter.
As soon as it rises, add it to the flour mixed with oil, pour the rest of the milk and knead a very soft dough. Wrap in cling film and place in the refrigerator. After 1.5 hours, after the dough has risen, remove and divide into 70 g logs.


Sprinkle flour on a baking sheet and spread the logs in a square shape. Double what you spread and spread thin again. Repeat this procedure three times. If the lavash sticks, sprinkle a little flour.
Cut the cheese into large pieces and grate. Add 20 g of butter, 1 egg and mix well (the mixture should not be too smooth, homogeneous). Place in the middle of the squares you spread and bend like an envelope.


Bake in a preheated oven at 220 degrees for 15-20 minutes. Melt the rest of the oil and brush over the finished penovanis.
Note: If you do not have time to make such dough, you can use ready-made dough.
