İngredients
4 medium potatoes
2 medium carrots
3-4 sprigs of spring onions
1 medium red onion
1 pinch of fresh thyme
1 pinch of fresh mint
Water to boil potatoes and carrots
For the sauce:
The juice of 1 lemon
1 tea glass of olive oil
salt
black pepper
pomegranate syrup or vinegar on request
Wash potatoes and carrots. Peel their shells and boil them in the water in which you add some salt (about 15 minutes).
While potatoes and carrots are boiled, wash the onions and fresh spices and mince them.
Cut the potatoes into cubes, grate the carrots with the thin side of the grater, add the other ingredients and mix them with 2 spoons without crushing.
Beat the sauce ingredients in a small bowl. Add to the salad and mix.
Serve after resting in the refrigerator for at least 1 hour.
